Benefits: This pudding is rich in omega-3 fatty acids from chia seeds, antioxidants from blueberries, and provides a creamy, satisfying texture.

Ingredients:

  • 1 cup almond milk (or any milk of choice)
  • 3 tablespoons chia seeds
  • 1 cup fresh blueberries
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions:

  1. In a bowl, combine almond milk, chia seeds, honey, and vanilla extract.
  2. Stir well and let sit for 5 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Before serving, top with fresh blueberries and an extra drizzle of honey if desired.
