Quinoa and Black Bean Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Let it cool.
  2. In a large bowl, combine cooked quinoa, black beans, cherry tomatoes, red bell pepper, red onion, avocado, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss to combine.
  5. Serve chilled or at room temperature.
